Italian Red Wine Roast Beef

Ingredients:

  • 2 1/2 lbs. beef round roast
  • 1 small onion (sliced thinly)
  • 1/2 c. water
  • 1/2 c. red wine
  • 1 tsp basil
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/2 tsp marjoram
  • 1/4 tsp ground black pepper

 

Steps:

  1. Place roast in the crockpot
  2. In a separate bowl, combine spices. Sprinkle over the roast, rotating to coat it evenly.
  3. Place onions on top of the roast, and pour the wine and water in the bottom of the crockpot.
  4. Cook on low for 8-10 hours.
  5. When the meat is done cooking, shred and toss in juice to keep it moist.

 

Sides: roasted veggies
