Roasted Lemon Parmesan Asparagus

Ingredients:

  • 1 lb. asparagus
  • 2 tbsp olive oil
  • 3 tbsp parmesan
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • (Optional) 2 garlic cloves, minced

 

Steps:

  1. Preheat oven to 400 degrees
  2. On a baking sheet, lay asparagus in a single layer, coat evenly with olive oil and sprinkle with salt and pepper.
  3. Roast for 8-10 mins
  4. Toss in lemon juice, parmesan and (optional) garlic.
