Slow Cooker Pot Roast

Ingredients:

  • 4-5 lb. chuck roast
  • Salt and Pepper, to taste
  • 2 Tbsp olive oil
  • 1 cup red wine
  • 2 whole onions
  • 8 carrots
  • 4 celery ribs
  • 3 potatoes
  • 2 cups beef stock
  • 4 cloves of garlic, whole
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 2 bay leaves

 

Steps:

  1. Rub oil, salt and pepper over chuck roast. Heat in skillet over medium-high heat on all sides. Set aside
  2. Pour in the red wine and deglaze the pan.
  3. Lay onions, celery, carrots and potatoes in the bottom of the crock pot. Place the roast on top. Pour wine and beef stock over the roast. Place herbs in the crock pot.
  4. Cook on high for 4 hours or low for 6-8 hours.

 

Note: onions in video were quartered, potatoes in large chunks, carrots whole and celery cut in ~3 parts.
