- 1 bunch asparagus (stems removed)
- 2 bell peppers, thinly sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 6 sprigs fresh thyme OR 2 tsp dried thyme
- 1 1/2 Tbsp extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- Preheat oven to 425 degrees.
- Toss all ingredients and spread evenly on the baking sheet.
- Roast for 15 to 20 mins or until veggies are tender and lightly brown
