Roasted Asparagus & Peppers

Ingredients:

  • 1 bunch asparagus (stems removed)
  • 2 bell peppers, thinly sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 6 sprigs fresh thyme OR 2 tsp dried thyme
  • 1 1/2 Tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Steps:

  1. Preheat oven to 425 degrees.
  2. Toss all ingredients and spread evenly on the baking sheet.
  3. Roast for 15 to 20 mins or until veggies are tender and lightly brown
